Mediterranean Tomato Soup with Pasta Fusilli

Kids will love this soup especially if you will use fancy pasta like alphabet .


500 gms. plum tomatoes, peeled

1 stalk celery, chopped

2 cloves garlic, chopped

1 small onion, chopped

100 gms. pasta fusilly

5 cups vegetable stock

1 cup soya or regular milk

1 tbsp. olive oil

1 sprig parsley for garnish

Sea salt and white pepper to taste


  1. Take out the seeds of plum tomatoes and set aside.
  2. Cook pasta fusilli according to instructions. Set aside cooked pasta.
  3. Warm 1 tbsp. olive oil in a deep sauce pan
  4. Sauté garlic, onion and celery for 10minutes. Then add seeded plum tomatoes.
  5. Add 1 1/2 cup of vegetable stock and simmer veggies for 15-20minutes.
  6. Scoop vegetable soup per batches in a blender until smooth.
  7. Bring puree to a casserole and add a cup of milk and 4 cups vegetable stock, simmer for 15 minutes.
  8. Season with salt and  pepper.
  9. Serve with finely chopped parsley.


Simmer seeded plum tomatoes, celery, garlic and onion with vegetable stock before turning into puree using a blender.
