Deep-fried Veggies in Beer Batter

This recipe is perfect to serve as  snack or appetizer or pair with wine or beer.

Ingredients

1 medium size zucchini, thinly sliced into wedges

1 medium size sweet onion, thinly slice into rings

150 gms button mushroom

Vegetable oil for deep frying

 

 

For the batter

Use dark beer with a lot of malt.

1 cup all-purpose flour

1 cup of dark beer

1 banana (chopped and mashed)

Salt and freshly ground pepper

 

 

For the sauce

¼ cup shelled walnuts

3 slices of day-old bread, sprinkle with water and left for few minutes then squeezed dry

3 cloves garlic, crushed

4 tbsp. olive oil

Juice from 1 lemon

Salt and ground black pepper

 

  1. Make the batter. Sift the flour in a bowl. Add salt, mashed banana in the middle then add beer, beat with the flour until smooth and thick batter is formed. Set aside for 30minutes.
  1. While waiting for the batter to be ready to mix with the veggies, make the sauce.Using mortar and pestle then pound the walnuts into tiny bits then transfer to a small ceramic bowl. Add squeezed bread and garlic, using pestle, pound the mixture to turn into paste.
  1. Drizzle olive oil, stirring occasionally, add lemon juice. If the mixture is too dry, add a little water. The sauce must be smooth with a consistency of thick cream. Season the sauce with salt and freshly ground pepper and set aside.
  1. Using large frying wok, heat enough vegetable oil for deep frying.
  1. Using metal tong, dip each veggies into the beer batter and drop into the hot oil. Fry veggies in batches until golden brown. Using slotted spoon, lift out crunchy veggies and drain well on a kitchen towel.
  1. Serve hot accompanied by the garlic-flavored dipping sauce. You can thread the button mushroom in a skewer while onion rings and zucchini served on a plate.
  1. Makes 3-4 servings.

Squeezed one-day old bread with olive oil, walnuts and lemon juice as the sauce compliment the taste of crispy veggies in beer batter since both has yeast and flour.
