Rocket Pesto Salad

 

Sweet cherry tomatoes are ideal for this recipe as it lighten the bitter taste of rocket.

You can also add baby spinach leaves for a mellow flavor.

200 gms. Shapes pasta

Handful basil and 1/4 cup olive oil (for pesto)

3 cloves garlic, minced

1 bag rocket (180 gms)

200 gms cherry tomatoes

50 gms. Croutons

50 gms. Pitted black olives, sliced

Extra-virgin olive oil

Salt

 

  1. In a large casserole, boil shapes pasta for 12 minutes al dente. Set aside.
  2. Using food processor, puree basil leaves with ¼ cup of olive oil.
  3. Bring out deep sauce pan and warm olive oil for 5minutes. Saute garlic and add puree basil and simmer for 10 minutes.
  4. Add shapes pasta. Season with salt. Set aside and chill for 1 hr.
  5. In a large salad bowl, combine the rocket, tomatoes, pitted black olives and cold pesto and toss well.
  6. To serve, garnish with croutons. Serve 5.
