Vegan Tacos

Enjoy tacos as snack with your favorite orange juice or fruit shake. Great ideas for vegan birthday parties, picnic and get-together!




What You Need

12 Taco shells


5 ripe tomatoes (1 cup fresh tomato sauce), washed, sliced and process using blender

4 cloves garlic, finely chopped

1 medium size sweet onion, chopped

3 bell peppers, finely chopped

1/2 button mushroom

1 tsp. tomato paste

½ cup tomato sauce

2 tbsp. olive oil

Freshly cracked pepper



For the Sauce

  1. In a large sauce pan, warm 2 tbsp. olive oil for 5 seconds over medium heat
  2. Sauté garlic for 2 minutes, add sweet onion, caramelize for 5 minutes. Add button mushroom and saute for another 5 minutes.
  3. Add bell pepper and sauté for another 5 minutes.
  4. Add 1 cup fresh tomatoes, tomato paste and ½ cup tomato sauce. Cover the pan and simmer for 5 minutes.
  5. Add salt and freshly cracked pepper to taste.
  6. Transfer to a ceramic bowl and set aside.


To arrange taco shells

  1. Arrange taco shells on a plate
  2. Arrange lettuce inside the shell
  3. Put the sauce on top of the lettuce
  4. Makes  12 servings
