Buko Pandan

Buko  Pandan refreshment is well-famous in Manila since Phiippines is blessed with lots of coconut trees and the fragrant pandan leaves. Buko is a Filipino word for coconut. This refreshment is perfect to add cubes of agar-agar (sea weed jelly) to add more meat aside from coconut meat.

Pandan leaves also known as fragrant screw pine is widely use in Asia for culinary uses and the natural green color is attractive to delectable rice cake desserts as well as to coconut juice refreshment.

What you need

1 liter fresh coconut juice with shredded coconut meat

¼ cup natural pandan syrup

brown sugar (or honey)

200 gms chopped agar-agar jelly

  1. In a pitcher, mix fresh coconut juice with coconut meat, natural pandan syrup and sweetener.
  2. Add chopped agar-agar jelly. Better use the transparent jelly that has no food coloring.
  3. Chill 2-3 hours before serving.


Agar-agar or seaweed jelly comes in powder pack that you can cook or you can buy it ready-to-eat straight from cans. In the Philippines, we call this “Gulaman.”


Gulaman is great with coconut juice and meat mix with Pandan syrup and sweetener.

Guava Mint Sorbet

Guava is extraordinary rich in Vit. C, lycopene and antioxidants which is good for the skin.  and regulates blood pressure. Mint is calming and soothing herb that aids indigestion and upset stomach. It improves oral health, and clears up congestion of nose and throat. A natural stimulant as well that relieves fatigue and depression. Fruit sorbet is perfect to serve during summer!


1 large ripe guava apple

or 5 medium size ripe guavas

2 tbsp chopped mint

honey or sugar as sweetener

2 tbsp flaxseed

6 cups water

ice cubes

1 lime


  1. Wash thoroughly ripe guava and chop to small cubes
  2. Wash mint leaves then chop
  3.  Using squeezer, squeeze slices of lime then set aside the juice
  4. Using blender, combine guava, mint, ice cube, lime juice, and flax seed.
  5. Blend until smooth
  6. Pour mixture in a freezer container rigid glass or small plastic tub then freeze for 12-15 hrs.
  7. Using fork, scrape the mixture after 4 hrs. then after every 2 hrs. to form ice crystal
  8. Makes 4-5 servings.



All-Natural Fruit Juice

Right after a long walk or exercise, nothing is more rewarding that  to drink all-natural fruit juice with ice.

Every time you crave for juice, always choose to make your own natural fruit juice and not those that comes from tetra pack box, can or plastic container. You do not know the hidden ingredients added to processed juice make it colorful and sweeter.  Mix and match fruits then add healthy sweetener if you like it more sweet like maple syrup, agave or coco sugar.

Try to add lemons in fruit juice. Lemons are good for cleansing the liver that can flush toxins from your body aside that it can boost your immune system. Here are some of fruit juice that I add lemon juice and honey.

When you are at home especially during the weekend that you spend your time with family, serve natural fruit juice instead of those instant. In this way, you encourage your family to go for natural food rather than processed.



How to Make Almond Milk

It’s easy to make almond milk right at your own kitchen, a very good way of reducing processed food in your home. This is 100% plant-based milk which means you are rewarding yourself to drink milk without any guilt of consuming animal products and most this has no preservatives or any chemical ingredients. This is also a great substitute for cow’s  milk in baking bread, cookies and muffins dairy-free.

What you need

1 cup of almond milk

3 cups of drinking water

  1. Soak almond nuts in a lukewarm water for 3-4 hours. Soaking will soften the skin and makes it easy to peel.
  2. Peel the almonds. Almond skin taste bitter which doesn’t taste good in drinking milk.
  3. Bring out blender. Pour out 3 cups of water and put the almonds. Blend for 2-3 minutes.
  4. Optional to add sweetener of your choice, either sugar or honey. Serve chilled or warm.
  5. Makes 3 glasses of almond milk

You can use blender or food processor in making almond milk

Notice the white milk that looks like a cow’s milk except this milk is plant-based and dairy-free.

Watermelon Granita

4 cups chopped watermelon, deseeded

3 tbsp. honey (for vegan, replaced with muscovado sugar)

Lemon juice from ½ slice of lemon

1 cup Mineral or spring water


  1. Using blender, combine all ingredients until smooth.
  2. Pour liquid into a shallow container and freeze for 4hours.
  3. Using fork, fluff the semi-frozen mixture until it resembles crystal beads texture.
  4. Freeze again for 6-8hours.
  5. To serve, fluff with a fork.


Blueberry and Banana Smoothie

What you need:


1 cup of blueberry yoghurt

1 medium size banana

2 tbsp. golden flaxseed



Combine all the ingredients in a blender and blend it less than 5minutes. Transfer the smoothie in a drinking glass.


Perfect as breakfast or afternoon quick snack.
