Mushroom Glaze

Sesame seeds is one of the ancient condiments that is high quality protein. It is also a good source of vitamins and minerals like iron, fiber and magnesium.


  1. Wash the mushroom, properly and drain
  2. Slice the green beans lengthwise, set aside
  3. Thin slice the bell pepper, set aside
  4. Warm cooking oil using deep pan over medium heat
  5. Saute first crushed ginger for less than 5 minutes or until aromatic
  6. Add crushed garlic then saute until light brown
  7. Add chopped onions to saute until caramelized
  8. Add slices of mushroom and saute 5-7 minutes
  9. Add slices of green beans and bell pepper and vegetable stock
  10. Add dark soy sauce and sesame seed
  11. Cover the pan and simmer for 5 minutes.
  12. Thicken the sauce by adding dissolved all-purpose flour.
  13. Simmer again for 3 minutes.
  14. Season with sea salt and freshly ground pepper
  15. Serve with rice

“Breast milk is perfect food for baby people, and cow’s milk is the perfect food for baby cows.”

Milk is high in saturated fat, calories and lactose. And if there is health benefits you can get from milk, it is too small. Milk is just a food. There is nothing special on it. Do we really need cow’s milk? I think we do not need cow’s milk, it is not really necessary considering it is not perfect for human. To be healthy, you do not have to drink milk. There are other ways to be healthy, there are other fruits and vegetables that contain protein and that can make you healthy without added hormones or antibiotics.

Cow’s milk is the first “foreign” proteins introduced to infants and kids which is too concentrated for human babies and has to be diluted to make an infant formula. Study shows that infants who had been breast-fed for longer period, the less their chance to develop autoimmune conditions. This observation, in turn, led to idea that children fed cow’s milk formulas might be more likely to develop type 1 diabetes, the type that starts in childhood.


Hormones added plus antibiotics
Like lactating human mothers, lactating cows secrete estrogen and other hormones into their milk. Natural milk from cow without any drugs included seems that estrogen and hormones has small effect to infants, children, or adult who drink cow’s milk. However, for greater profits and efficiency, cows are producing 20% more milk than typically they do if they are injected every two weeks of cow growth hormone. The hormone is known as recombinant bovine somatotropin (rbST).

The use of rbST has three issues that must resolve: the effects of rsBT on dairy cows, the effects of antibiotics to human health, and the effect of insulin-like growth factor to human health.

The effects on cows have to do with their skin during the biweekly injection of rbST to force them to produce more milk, their skin break and the infection started to develop. And that is where antibiotics come in. The more infections a cow develops, the more antibiotics she needs. Antibiotic gets into the milk she produces and into your digestive system when you drink the milk.

Another theoretical effect of drinking milk that it contains antibiotic can kill friendly bacteria in your intestine and encourage proliferation of unfriendly bacteria that resist treatment with these drugs.


Lingering doubts in Organic Milk
Horizon Organic the largest organic dairy in the U.S. proclaims on its milk cartons “Produced without the use of antibiotics, growth hormones an dangerous pesticides.” “Our cows are treated with respect and dignity, fed a certified organic vegetarian diet and never given growth hormones antibiotics…together we can change the world one organic acre at a time.”

This advertising campaign drives anti-organic into an anger that led them to develop a *website that expose marketing campaigns. They are questioning farm owner that if the cow is organically grown, how come after a decade, cow’s milk raise to more than 50,000 compare from year 1990 that only 2,00 cows are producing organic milk. *(visit

In parts of the world where cow’s milk is not a staple of the diet, people often have less osteoporosis and fewer bone fractures than we do; they maintain calcium balance perfectly well on less than half the calcium intake recommended for Americans.

Dairy foods are not a nutritional requirement. Think of cows. Cows don’t drink milk after calf hood, but they grow bones that fully support 800-pound weights and more. They do this by eating grass. Grass has high calcium, and so does every other food plant: fruits, vegetables, grains, beans and nuts. These foods have small amounts of calcium compare to dairy foods, but small amounts add up can meet the required calcium that our body needs from day to day. People who eat greater proportion of foods from plant sources may do just well—or better—with less calcium in their diets from any source.

Milk is only just one food in the diet of people who can eat many different plant foods available without violence, drugs and toxic.

People often ask my religion every time they learn I am a vegetarian and funny they often say I am Muslim. Of course they can’ say I am Hindu, I don’t look Indian. In Philippines, if you are not eating meat, you are Muslim. So I politely say, “No, I am not Muslim. Muslim doesn’t eat meat but they eat burger in Jollibee.”

My decision to fully embrace the diet of fruits and vegetables has never been connected to my religion. Catholic has no food restrictions except Lenten Season. The only religion that honors the sacredness of animals is Hinduism but then not all Hindu are vegetarian or vegan. Like Buddhist, some of them or most are still eating meat.

To choose our own diet is always a personal choice and not connected to religion that even within your own tribe, your own family, you’re not influenced by them and vice versa. If you’re the only vegetarian in the family, your parents, brother, sisters; they are not willing to give up eating meat and its difficult to convince them. The decision to change will always come from theirs not yours.

Food that we eat doesn’t only give life energy but it can also cause stress, heaviness and disease. The food that we eat could also make us energetic or lethargic. We are nature and we went through this mystery of creation like plants and animals. And to feed on artificial and processed diet, it is like you are creating walls between you and that divine soul in you. The food that we eat is affecting our spiritual life and to eat plant-based diet which comes from the ground, sprout from the soil of earth, we feel more grounded to earth, to nature, that gives us clearer thoughts with happiness and joy.

The food that we eat is considered as material because we live in a physical world. And once digested, vitamins and minerals go to the body and the waste part we eliminate. But the process of digesting foodis more than physical level. Everything around us is spiritual even the kinds and types of food we eat. If you are truly connected with yourself, your soul will tell you what to eat. Observe yourself if you get sick, no one will dictate you what to eat but your own spirit, your instinct will tell you what to eat because it knows what exactly your body and soul need that will bring healing more than the hunger you need.

Do try to feed yourself with junk food and processed food and negative thoughts and unhappiness will disturb you. Eating highly processed food full of chemicals like canned goods, biscuits, potato chips, colorful candies, processed meat, ice cream, coke, etc. cause people to become lazy and lethargic. And they become not interested in eating raw fruits and vegetables. They are so comfortable within their comfort zone that they keep eating just to fulfill the habit though they know that it is not good for the body. People become slave of processed food in order to join the crowd and be comfortable.

A person embarking on a higher spiritual journey, they see food as sacred, as sacred as their soul. And they have this wisdom that herbs, fruits and vegetables are “truly” food of their soul that refresh their mind, soothe their senses, cleanse their aura and make them grounded to the earth, to other creations and to the Divine creator.

There are old men and women in the rural areas or living in the provinces that choose not to eat meat but they don’t call themselves vegetarian or vegan. They know that vegetables are healing physically and spiritually and they need it as they grow old to have more connection with their own spirit and soul.

Imagine this, if you have your own garden and you watch your vegetables and fruits growing, and as you harvest, the joy and happiness it bring is incomparable. Gardening like other artistic hobby feeds our spiritual life. And what more if we eat fruits and vegetables, the energy it brings will brighten our soul.

Starting today be mindful and conscious on what you eat. Choose a diet that will uplift your spirit and soul and not just to fulfill your hunger and serve your bad habit of eating junk.

Eat whole food. Eat natural food. Eat food that doesn’t come from violence and harm. Become grounded by eating fruits and vegetables.

Awaken your soul. Step into a higher level of spiritual journey. Become vegetarian now!

If you are eating fruits instead of junk food, eating vegetables instead of meat, prefer to drink water rather than coke in can, then it means you value your health. When buying packaged food, you carefully check the ingredients if there is beef and chicken flavoring. This usually can be found in ramen noodles, and in potato chips and biscuits or crackers.

What is exactly meat flavoring? The meat flavoring is not exactly from beef or chicken at all. The amino acids from animal meat has added sugar called starch hydrolysate combine with citric acid and heat it as same temperature as meat.


French Fries?—Think Twice
Believe it or not, there is hidden flavoring in fast food French fries particularly McDonalds. In 2001 they include beef flavoring making their fries not suited for vegetarian. Even in Hash Brown they serve as all day breakfast has secret ingredients of beef flavoring. Here are the ingredients of McDonalds fries: Potatoes, partially hydrogenated soybean oil, natural flavor, dextrose, sodium acid pyrophosphate (color preservative). Natural flavor includes beef flavoring. Yet in 2002 they settle the issue clarifying that fries are neither vegetarian nor vegan. But who knows if they “honestly” taken out the natural beef flavoring even if they made public apology about this issue because they are selling fries for decade and cooked the fries with beef tallow.


Chemical Additives and Preservatives
If you are buying biscuits that you cannot resist, take a look first the ingredients. If there are more than six or more than ten chemical additives and preservatives, put it down. As vegan and vegetarian, we want as much as possible natural. If there are a lot of chemicals in the processed food you are buying that you cannot understand, don’t buy it! If you truly value your health, you will not poison yourself.

Eating raw fruits and vegetables every day is good to our body. It contains vitamins, minerals and phytonutrients that balance our pH levels and boost our immune system. Eating raw foods that are unprocessed coming directly from earth is the source of energy when digesting it. Enzymes from plants and vegetables are considered as “prana” or life force that’s why we should consume eating raw more than two servings per day.Broccoli is famous for its content sulforaphane that protects the human cells from cancer. Tomatoes have lycopene. Onion and garlic have allium compounds. Soybeans have flavonoids while eating good-size orange or banana in a daily basis, it is like you have consumed two pyramid fruits servings or close to that amount. This is how fully-packed nutrients apple and banana are.

Fruits and vegetables are the main or only source of Vitamins C, Vitamin E folate and beta-carotene. It also contains variations of phytonutrients that protect human body against disease. These nutrients are the main reason why we should eat fruits and vegetables. Eating diverse choices of fruits and vegetables will provide the nutrition that we need. Since we tend to eat always the same kind of fruits and vegetables, keep in mind that slices of cucumber, tomatoes and lettuce will not give everything we need from plant kingdom. To eat in different varieties has greater impact in our health. According to Marion Nestle, author of “What to Eat” says, “People, who eat five or more servings of fruits and vegetables daily, seem to have half the cancer risk of people who eat only two servings.”


Organic vs. Conventional
Whether fruits and vegetables are organic or not, still they are fruits and vegetable. All the same except for higher nutrients of organic that comes from better soil without pesticides. The vitamins and minerals of organically grown food depend on how much nutrients are present in the soil. The difference will only be of its genetic strain and how it was handled and treated after the harvest. But still, organic or conventional, both gave nourishment and aid proper digestion to human body.

In buying and supporting organics, we are fostering the welfare of the planet with less pesticide, less risk of illnesses to the farmer who are exposed to chemicals; we are promoting to conserve richer soil and cleaner water supplies which is truly better in the long run. If we choose to buy the conventional and locally grown, we are supporting the conservation of fuel resources and the economy of local communities together with the freshness of the fruits and vegetables.

In buying fruits and vegetables, the question is “Does price matter?” and the answer is always “Yes.” In looking for a healthier view, it is the organic matters. But for practicality, we choose the locally grown and the common one. Organics are pricey and if you cannot afford to buy it, be practical. Never worry; you are both helping farmers to have job and supporting green planet especially locally grown which will be the wave of the future.


GMO Issue
Genetically Modified Organism (GMO) is what made up of even in grains, fruits and vegetables. Like the politics of organics, we do not know if it is really organic, how organic it is and what is the process to label it as organic? In buying fruits and vegetables, of course no one will put the label “GMO” because no one will buy that. But then, we cannot say it is really GMO unless you will conduct a study and test.

I am pretty sure all of us are eating GMO fruits and vegetables. What important is, though it is GMO, at least it is not animal cruelty.


The Battle
People are lazy and what they want is to favor things that will make them comfortable and convenient. Observe people at the supermarket queuing at the cashier’s lane. Their basket is filled with more bags of chips, junk foods rather than “real fruits.” Why it is so? Knowing that it is junk food, still people are eating zero nutrients yet paying the tax for each bag of chips that fills their stomach empty. The main reason, it becomes bad habit of eating food that is high in sodium. People who incorporate raw fruits and vegetables in their diet are truly “health conscious.”

Have you seen any commercial in TV promoting fruits and vegetables? None! It is the junk food company that has a lot of money to afford advertisement to push people to eating more toxins. While eating fruits and vegetables for a daily basis is always being neglected by a lot of people. Check the diet of a racing horse that eats apples daily and well fed by natural vegetables. It’s a shame, these racing horses are healthier than other human beings who were given brain to think and analyze what food is good and bad.


The “Raw” Habit
Upon waking up in the morning, always start your day with raw to recharge the alkaline in your body. A simple drink of water and a teaspoon of apple cider or water with lemon juice to cleanse the stomach is a good practice before the stomach will be filled with other foods in the whole day. Apple cider and lemon juice when mixed with water will help you to lessen your appetite in eating huge servings. Then instead of eating biscuits before lunch, eat banana or apple. To eat fruits before and after meal will help balance the enzyme that the body needs.

Carcinogen – a substance capable of causing cancer in living tissue

In October 2015, World Health organization announced that processed red meat produced carcinogen that produce different types of cancer. The link between cancer and eating red meat has been studied by the World Cancer Research Fund through 7,000 clinical studies that processed meat is too dangerous for human consumption. The sodium nitrite to manufacture processed meat results to the formation of nitrosamines that increase the risk of cancer. In eating 50 grams of eating processed meat, there is also more than 50% risk of getting pancreas cancer and 21% risk for colorectal cancer (bowel cancer) in the studied conducted by University of Hawaii in 2005 .

Sodium nitrite is the primary ingredients of processed meat products (which doesn’t include fish and chicken) and combined with monosodium glutamate (MSG) which is another dangerous additive can be found in:

• Beef jerky
• Bacon
• Sausage
• Hot dogs
• Sandwich meat
• Frozen pizza with meat
• Canned soups with meat
• Frozen meals with meat
• Ravioli and meat pasta foods
• Kid’s meals containing red meat
• packaged ham, pepperoni, salami
• Nearly all red meats sold at public schools, restaurants, hospitals, hotels and theme parks

Consumer knows the effect of processed meat but then you cannot stop them because it is readily available. Even the government food authority is supporting this kind of processed food because it is about business, profit, capitalism! At the end, it is always the consumer who suffers that unless they get chronic disease like cancer, that’s the time they will stop eating red meat.

Self-discipline is always the key to a healthy living. By choosing plant-based diet, you are helping yourself to boost your immune system and not giving too much stress on your body by forcing it to digest animal meat.

If red meat from cow, pig and lamb has carcinogen, eating chicken has a lot of hormones. Yet average people are still choosing food out of cruelty. Always remember, our body is sacred and our stomach is not a graveyard to throw those meats from dead animals.

The cure for cancer is always right at your own choice of filling your kitchen with herbs, fruits and vegetables which is beyond doctor’s prescription.

There is no rule that you have to eat outside or every weekend you go out to eat in a fancy restaurant. For me, the best food is the one that you prepare and the one that you cook which is home food! Eating outside has risk of eating food with msg and high in sodium. As vegetarian, the discipline that goes with it is to make your own food.

Some people don’t know how to cook and this is the common problem of aspiring vegetarian. But then there are vegan meals available nowadays and to become vegetarian is not that pain. Yet, it is also different that you are the one who prepared your meal. Chopping vegetables is good for our soul. The different colors of vegetables and the smell of herbs, onion and garlic are healing and soothing. It also clears toxins in our body especially when chopping onions. Spending time to chop veggies is relaxing to the body.

Food that you prepare at home is naturally made and this must be the best factor in buying food outside. I am not a fan of TVP (True Vegetarian Protein) or veggie meat which is highly processed and usually very high in sodium. It’s better to eat vegetables of mushroom or green peas as source of protein or tofu than veggie meat. Though some vegan has this reason saying, “at least it’s not meat.” They are right but the main thing to consider here is, “is it natural?”

There are tons of websites offering vegetarian/vegan recipes and because of this technology, there is no excuse not to learn how to cook, to prepare meals and kitchen techniques. If there is a will, nothing is impossible for there is always a way.

The advantage when you become vegetarian, you will learn new things you didn’t know before. You will know more of yourself what your strength is and how to improve weaknesses if you are tempted to go back eating meat. You are like a chemist or a painter mixing and matching what veggies are good as pair or has medley when combined. It will push you to get out of your comfort zone and make a new habit of being creative.

Eating outside is good once in a while but nothing beats home food. Do you know that some restaurants that are selling vegetable meal are using chicken cubes to make the food tasty? It is a huge turn-off but that is the reality, this info comes directly from my friends who are cook and chef that have background in serving vegetarian food.

Learn to cook your own food, make research, do experiment and be creative. Become a vegetarian now and start discovering your potentials when it comes to cooking without depending from others.

Fruits and vegetables are colorful that resemble to rainbow colors. It is vibrant and livelier than a chopped meat which lifeless. You can choose red, yellow, green, purple, blue and orange. While animal meat looks the same with blood.

The fun of being vegetarian is making your own food and doing experiment. It makes men and women equal when it comes to preparing food and by staying in the kitchen for hours mixing and matching colorful fruit and vegetables. Being vegetarian is challenging on what food you will eat but it trains your skills in cooking. And you will be like a chef of your own, doing artistic presentation and combination of colorful fruits and vegetables. Sometimes if the experiment doesn’t taste good, it is normal. The more you fail, the more you succeed and improve.

Getting creative in our diet by eating brightly colored fruits and vegetables is beneficial to our health. It reduces the risk from getting heart disease, high blood pressure and other disease. Below are the list of colors of fruits and vegetables and its health benefits.

Red fruits and vegetables- are colored by natural plant pigments called lycopene or anthocyanins. Lycopene can be found in tomatoes while anthocyanins are present in red apples, red grapes, red pepper, and strawberries that act as antioxidants like lycopene keeping our heart and cells healthy.

Orange and Yellow fruits and Vegetables- are colored by natural pigments called carotenoids. Beta-carotenes in sweet potatoes, pumpkins and carrots are converted to Vitamin A which help maintains healthy eyes and can improve immune system function. Citrus fruits like oranges are not good source of Vitamin A but Vitamin C and folate.

Green fruits and vegetables- are colored pigment called “chlorophyll that can be found in dark leafy greens like spinach, green peppers, peas, celery, etc. These green leafy veggies like spinach reduce the risk of cataracts and age-related macular degeneration that can lead to blindness. Spinach like squash are good for the eyes.

Blue/purple fruits and vegetables- are colored by natural pigment called “anthocyanins” that can be found in red fruits. Anthocyanins in grapes, raisins and blueberries act as powerful antioxidants that protect cells from damage that help reduce cancer, stroke and heart disease.

White fruits and vegetables- are colored by pigments called “anthoxanthins” that contain health-promoting chemical called allicin which help lower cholestretol and blood pressure. Some fruits and vegetables of white group are bananas, potatoes, cauliflower, mushroom that are also good source of potassium.

When I started to become vegetarian, I keep doing weird, crazy and different experiment. This is how Vegatty was born. I failed how many times and did more than 15 varieties of patties that I even mix eggplant with spinach and it taste so crazy! (laughs!) Until I come up to 6 varieties and it become best seller.

When you invite your family and some friends to your house or for gathering and let them taste what you cook, never expect that all of them will like it. Some has negative comments and some will offend you even a family member. Never get affected, as you recall what we have discussed in Day 1, being vegetarian is being tough from criticism. It will train your level of tolerance. If you still try to convince them to go for non-meat diet, never give up and share to them this 30-days challenge.

Karma- means action, work or deed,spiritual principle of cause and effect

What we sow is what we reap. Whatever we give to life, life brings it back to us. In every action we take,
we get the outcome, consequences or result. This is the equivalence of karma.

We all know that karma is a fundamental doctrine from Buddhism and Hinduism. Regardless of religion, there is always equal opposite reaction to what we do. If you do not work you will not earn. If you are honest then you will meet honest people. This is the same on what we eat. Before those cooked meat served in front of you, it went through a lot of torture and violence. You just do not see how it was cut, how it was chopped and how killing was started.

Few years ago I lived with my sister in the village that is exclusive. I stay for less than a year but something I cannot stand with triggers me to leave for good. Each night beginning at 11:30-12:00 midnight, sleeping in my bed is so horrible. This village is situated near the slaughter house that I can hear the howling of animals even if I close all the windows and the aircon is open. Killing of animals lasted for 3 hours that even when I get used to it, I suddenly wake up around 1 or 2 or 3am from that terrible crying of animals.. . It feels so creepy, ghostly and truly sad..Every time I hear those pain from animals, my is soul is also hurting in silence.

If you’re the kind of person who believes in energy, all those energy of horrible pain are being carried in every chopped meat being eaten by humans. Do you know that eating meat is not good for our soul and spirit? If you want to uplift your spiritual life and make it in higher vibrations, do not eat meat. Every time you eat meat, those pains from animal killing are being carried by our soul that makes our soul heavy and wounded. And that energy of heaviness and violence are manifested in the physical body that we call illnesses.

People are suffering with disease and some are chronic like rheumatism, cerebral palsy, heart attack, cancer, etc. Believe it or not, this is the karma that people get from eating meat. Some do not believe in this cause and effect of eating meat but then notice when they get chronic disease or when they get old, they stop eating animal meat. Though in reality all of us get sick but once you eliminate meat in your diet, you feel lighter, energized and you don’t easily get cough and colds. Your immune system becomes stronger.

Human being has higher thinking than animals. We are sacred. We are divine. And we are created to co-exist with animals without violence and harm. To cultivate compassion with the animals by not killing them is one of the greatest challenges of human being that the creator bestows upon us.

Karma is fundamental doctrine in Buddhism but Buddha itself is not vegetarian. For them, eating pig, chicken, cow and fish are good except for animals in the wild. They have this teaching of “no harm” to everyone, “no harm to no one” by creating harmony and spreading love yet they support animal violence which is ironic. If you want no harm and spread love, stop killing the animals because animals like humans have spirit and soul.
